The mineral nutritional values of foods is an important aspect that should be considered (especially the intake for iron, calcium, potassium, manganese, copper, chromium and zinc) to obtain a correct balanced diet, that is essential to maintaining good health. In the literature there are many information on mineral content of different foods, but due to the high analytical costs of traditional methods (AAS, ICP-MS) in the real world, only few data are routinely produced. The use of an alternative cheap analytical technique as TXRF can help to overcome this knowledge gaps.

TXRF (Total X-Ray Reflection Fluorescence) is a simple and fast method to analyse element. Different types of food and beverages were analysed with TXRF to verify the concentration of some elements and to point out possibly differences of composition. Encouraging results were obtained in combination to multivariate analysis of data too.

The polyphenols are able to reduce the amount of free radicals and stimulate the immune response. In this study, polyphenols extracted from olive mill wastewaters, were fed to pigs for three months. Morphological, inflammation and immunological parameters were evaluated. Historical samples of gastrointestial tracts were analyzed for immunodetection of cyclooxygenase-2; superoxide anion production in primary cell cultures of blood leukocytes and alveolar macrophages was measured.

Agricultural waste by-product are a rich source of biomolecules with antimicrobial, immunostimulant, anti-tumoral and anti-oxidants properties. The use of polyphenols extracted from these by-products as dietary supplements in animal feed may improve the health of animals thus limiting the use of antibiotics. We used the polyphenols extracted from the skin of chestnuts, of which Campania is the main producer, in order to evaluate a possible immunostimulant activity on leucocytes isolated from blood and GALT of the rainbow trout Oncorhynchus mykiss.

For enforcement purposes and for reliable surveillance programs, the availability of validated methods for determining food contaminants with performance characteristics that meet certain minimum criteria is mandatory. A brief overview of recent activities carried out at the Institute of Sciences of Food production, National Research Council of Italy (ISPA-CNR) on the development and validation of analytical methods for the determination of mycotoxins in food is presented.

The stable isotope ratios of the five bio elements carbon, nitrogen, hydrogen, oxygen and sulphur have frequently been used in the last few decades to determine the authenticity and traceability of many food commodities. In this paper, issues regarding calibration, suitable reference materials and correct methods to obtain reliable results with this potentially powerful technique are critically discussed and commented.

The determination of strontium and lead isotope abundance ratios by MC-ICP-MS (multicollection inductively coupled plasma mass spectrometry) has been applied to 28 authentic teas from various origin. A noticeably different value of 87Sr/86Sr has been obtained for Japanese tea. A distinctive trend of Pb-isotope ratios has been observed for the different geographic regions of sample origin. The combination of isotopic and elemental concentrations tremendously increases the discrimination possibilities compared to a single isotopic or elemental system.

In this study, the applicability of stable isotope (δ13C, δ15N, δ34S, δ18O) and multi-element (K, P, S, Cl, Ca, Si, Zn, Br, Rb, Sr, Ti) data for determining the geographical origin of Slovenian organic garlic (Allium sativum L.) and potato (Solanum tuberosum L.) was examined. The discriminant analysis (DA) of obtained data suggested a distinction of four macroregions (the Alpine, the Dinaric, the Mediterranean and the Pannonian). The most significant parameters for separation were δ13C, δ34S, Zn, P and Cl in garlic and δ13C, δ18O, δ34S, K, Cl and Ca in potato.
